Fresh Pressed Caviar is prepared in the beginning of the fishing season. This is the time when the eggs are the firmest. This world-famous delicacy is prepared from mixture of Osetra and Sevruga eggs. It is produced the same way as it has been for centuries: the eggs are salted and then squeezed through cheese cloth bags.
